Ingredients:
- 2 lbs medium shrimp
- 1 tablespoon coconut aminos from coconut sap
- 1 lemon zest
- 1/2 cup lemon juice freshly squeezed
- 2 tablespoons of olive oil
- 2 green onions finely chopped
- Salt and freshly ground pepper
- 2 tablespoons fresh coriander leaves finely chopped for garnish
Directions:
- In a bowl, whisk the coconut aminos, lemon juice and zest, and the salt and pepper.
- Place shrimp in a large container and cover with coconut aminos sauce; cover and refrigerate for 2 hours.
- Heat the oil in a large frying skillet.
- When hot, sauté the green onion for 5 - 6 minutes.
- Add marinated shrimps and stir-fry for 3 - 3 1/2 minutes for large 3 - 4 minutes.
- Garnish with coriander and serve hot.
